Sindhi Kadhi Recipe - M.M.Mithaiwala

Sindhi Kadhi

Ingredients:

Oil- 5 tblsp
Asafoetida - a pinch
Green chillies - to taste
Cumin seeds - 1 tsp
Fenugreek seeds - 1 tsp
Gram flour - 6 tblsp
Turmeric powder - a pinch
Mixed vegetables (carrots, ladyfinger, brinjal, drumsticks,potatoes, bottle gourd)- 2 cups/200 gms)
Curry Leaves- 5-6
Coriander leaves - 2-3 sprigs
Salt - to taste 


Method:

  • Heat oil in a deep pan.
  • Saute cumin seeds ,Chillies, hing, fenugreek seeds and curry leaves on a low flame.
  • Add gram flour and stir continuously until turns into brown
  • Add 5-6 cups water bring to a boil and stirring continuously to avoid forming lumps.
  • Add mixed vegetables into pan  Add salt, red chilli powder, turmeric powder.
  • Mix very well and cover the pan by keeping a heavy weight on the lid, so that vegetables (specially potatoes) tenders well and a nice color of kadhi comes out.
  • Garnish with chopped coriander leaves.
  • Serve hot with plain rice

Rava Dosa Quick & Easy Recipe - M.M.Mithaiwala

Rava Dosa

A simple and delicious dosa prepared from ragi has many health benefits and helps maintaining balanced diet



INGREDIENTS
·        2 cups ragi flour
·        1 cup dessicated coconut
·        1 cup curd
·        salt
·        Butter/Oil/Ghee
·        water

METHOD:
  1. Take the ragi flour in a bowl add the dessicated coconut to it, then add the curd and salt.
  2. Add water to the mixture and mix it well.
  3. Let the batter slightly thin than regular dosa batter and covere for 30 minutes.
  4. On a medium hot pan pour the batter and spread it slowly.
  5. Apply some butter/Oil/ghee on top. flip and cook the other side.
  6. Serve the ragi dosa with chutney.

Rice Kheer Recipe - M.M.Mithaiwala



A rich and creamy dessert - Rice Kheer
Ingredients:
Basmati rice 50 grams 
Ghee - 2 tablespoon
Sugar 3-4 tablespoon
Milk - 1 litre
 
Cardamom
 
Almond and cashew nut

Method:
1. Wash and soak rice for 1/2 hour.
2. Drain it and keep the rice aside for sometime till it is completely dried.
3. Heat ghee in a pan. Add the rice and fry till light brown.
4. Add milk to the rice and keep stirring till the mixture thickens or reduces to 1/3rd of the orginal quantity.
5. Add sugar and mix well by partially crushing the rice.
6. Basmati kheer is very creamy and has a delightful aroma, especially when seasoned with grounded cardamom, thinly sliced almond and cashew nut. 
8. Keep in the fridge and serve chilled. It can also be served hot.
